Magic Mushroom Powder
From Nom Nom Paleo

I use this seasoning on just about everything.

1 oz. dried porcini mushrooms (don't substitute - you need the porcini flavour)
1 Tbsp. red pepper flakes
2 tsp. dried thyme
2/3 cup kosher salt
1 tsp. freshly ground pepper
  • Throw the dried porcini mushrooms into a spice grinder and pulse until they are finely ground.
  • Pour the ground mushrooms into a bowl.
  • Add red pepper flakes, dried thyme, kosher salt and pepper.
  • Stir well.
  • Store in an airtight container and use freely.
The hardest part of this recipe is finding dried porcini mushrooms.  I found mine at Kin's in Richmond.

Paleo Ketchup

Makes about two cups.

1 - 14 oz. can to tomato sauce (read the label - make sure there is not added sugar or chemicals)
2 Tbsp. apple cider vinegar
1/4 tsp. dry mustard
1/4 tsp. cinnamon
1/4 tsp. salt
1 pinch of dry cloves (I actually have a measuring spoon that says "a pinch" but if you don't, about 1/8 tsp.)
1/4 tsp. grated nutmeg
1 pinch of cayenne pepper
1/4 tsp salt
1 tsp maple syrup or honey (optional)
  1. Place all the ingredients into a small saucepan and simmer over low heat until slightly thickened.
Pour into a jar and let cool.

Paleo Coffee Creamer
1 can full-fat coconut milk (no additives)
1 egg
2 Tbsp. coconut oil, melted
1 Tbsp. maple syrup (or raw honey)
1 Tbsp. vanilla extract (pure vanilla extract - or, even better if you can afford them, the seeds from one 
   vanilla bean)
  1. Put all the ingredients into a Magic Bullet (Nutri-Bullet) or a blender. 
It will keep in the fridge for about a week.
